Seriously we had so much fun and tried so many delicious vegan vittles! I was inspired by everything I learned, and saw, I came home and made this:
On the left I made Garlicky Mushroom Kale and Curried Cabbage & Peas from
And on the right my own little simple salad (recipe below):
1/4 cup Sweet Vinegar Peppers
1/2 cup Kamut, Cooked
1/2 cup Cannellini Beans, Cooked
Mix together and YUM!
On a non-vegan note I had just finished reading Hell's Corner by David Baldacci and really wanted to take a stroll and see the Lafayette Park that he wrote about. I had been to the White House before but never noticed this little park across the street. It is always fun to go to a real place that is discussed in a novel!
