"It's All Good Stuff" Santa Fe Gardein Chik'n with Fingerling Potatoes and Kale with Butternut Squash

Ever since I was put to work in the kitchen as a wee tot--peeling potatoes, carrots, or shucking corn--I always loved cooking and being around food. Of course, when I was a kid, the ultimate payoff was getting to lick the batter off the mixer beaters when my grandmother made her "from scratch" cakes or homemade whipped cream!
These days, a good meal makes me happy. But I don't always have the time to make things "from scratch" so I appreciate quick-cooking items. 


(I promise I don't work for Gardein! But some of their products are just spectacular! And they cook so easy and fast.)


Tonight we tried the Santa Fe Good Stuff Chicken stuffed with corn and black beans. Another delicious product, it cooked in 20 minutes! Can't beat that!


With Nanowrimo coming up as well other writing deadlines, Gardein just makes dinner a little easier. 


Along with a side dish of kale & butternut squash AND the most amazing, smokey, delicious, I-can't-use-enough-adjectives to describe the yum factor of these Fingerling Potatoes Braised With Smoked Paprika from Susan V of Fat Free Vegan...hubs and I had a wonderful, nutrient-packed, balanced meal! AND even though that sexy plate is filled with all that goodness, the entire dinner was less than 450 calories! 

Which left a little room for a Dogfish Head Punkin Ale :)

  2. It is really good. I love the sauces they use with their foods. Always flavorful. And a perfect portion size.
